Blueberry Banana Baked Oatmeal

INGREDIENTS:

  • 1 cup rolled oats
  • 1/2 cup chopped pecans, divided
  • 1/2 tsp baking powder
  • 3/4 tsp cinnamon
  • pinch of salt
  • 1/4 cup maple syrup
  • 1 cup milk
  • 1 large egg
  • 2 T unsalted butter, melted and slightly cooled
  • 1 tsp vanilla extract
  • 2 ripe bananas
  • 1 cup BRIDGE AVENUE BERRIES blueberries fresh or frozen and thawed.

DIRECTIONS:

  • Preheat oven to 375 F
  • Lightly grease a 2 quart baking dish. In medium bowl mix oats, half of pecans, baking powder and cinnamon. Stir to combine.  In liquid measuring cup combine syrup, milk, egg, butter, and vanilla.
  • Slice bananas in a single layer over the bottom on the baking dish. Top with half of the BRIDGE AVENUE BERRIES blueberries.  Sprinkle the dry ingredients oven the fruit and then pour the liquid ingredients evenly over the oats.
  • Sprinkle with the remaining pecans and blueberries. Bake for 35-40 minutes, until the top is browned and the oats have set. Let cool 10 minutes before serving.
  • Serve with additional milk and maple syrup.
